The Pursuit of the Missing Bowl

​My journey with Gaifan began on the vibrant streets of China. Growing up, it was more than just food; it was the rhythm of daily life. I remember the sound of the heavy metal ladle hitting the wok, the aromatic steam rising from a fresh pour, and that first, perfect bite where the savory sauce met the warm rice. It was the ultimate comfort.

 

When I moved to America, I looked for that feeling everywhere. I visited countless restaurants, but the Gaifan I knew — the one with the true "Wok Hei" and the soul-satisfying "Soak" — was nowhere to be found. In its place were divided plates, cold side-dishes, and rice that felt like an afterthought. For years, I missed the simple harmony of a true Gaifan bowl.

I realized that if I wanted to taste it again, I had to build a House for it.

iWok was born from that nostalgia, powered by modern precision. We use high-precision induction technology not to change the tradition, but to protect it — ensuring that the "breath of the wok" I missed for so long is captured in every bowl we serve. We treat our iWok Pearl Jasmine Rice with the respect it deserves, because in a true Gaifan, the rice is the soul.

I built the House of Gaifan for the immigrant looking for a taste of home, and for the New American looking for a level of comfort they’ve never experienced before.
